Fructose is a monosaccharide, a unit of so-called simple carbohydrates founded naturally in fruits and honey sweet. Easily absorbed and rapid assimilation is a nutrient that provides 4 calories per gram.
For its intense sweetness, it takes less quantity to sweeten foods, which means that using fructose instead of sucrose, with a much smaller amount we can get the same sweetness.
Fructose is used as a sweetener for people with diabetes, because taken in moderate doses does not require insulin to be metabolized. Unlike refined sugar that is absorbed instantly producing a rapid rise and fall of energy, fructose is metabolized and stored, in part, by the liver as glycogen as a reserve for when we need to make an effort.

- It is sweeter than table sugar (sucrose), so we need less amount to sweeten, therefore lower energy intake.
- It has greater solubility in liquids than table sugar.
- It is better tolerated by diabetics as it increases less the level of blood glucose and in moderate amounts does not require insulin for it metabolization.
However, this does not mean that diabetics could use fructose without control, because part of the fructose is converted into glucose in the liver, which does require insulin. Diabetics could consume 50 to 70 g per day without producing alterations in glycemic curve. Single doses higher than 80 g will produce a laxative effect.
